RICE PUDDING WITH RED WINE MONTEFALCO Print

 

-250g of rice

-1l of red wine of Montefalco

-180g of sugar

-40g of butter

-grated zest of one lemon

-2 cloves

-a pinch of ground cinnamon

-½ cup of whipping cream

-a pinch of salt and pepper

Cook the rice over moderate heat in wine seasoned with salt, pepper, lemon zest, cloves and cinnamon. When cooked, add 150 g of sugar, mix well and drain the rice, then press it carefully into a form first wet with cold water. Put in a cool place, and when the pudding has completely cooled, unmold on a serving dish. Whip the cream with the remaining sugar and guarniteci the pudding.
